Ingredients:

  • 10 large eggs
  • 200g of fresh spinach
  • 150g of feta cheese
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon of olive oil

Instructions:

  • Heat the frying pan over medium heat and add the olive oil.
  • In a bowl, whisk the eggs until well beaten. Season with salt and pepper.
  • Add the fresh spinach to the frying pan and sauté for 1-2 minutes until wilted.
  • Pour the beaten eggs over the spinach in the pan, tilting the pan to ensure even coverage.
  • Crumble the feta cheese over the eggs and cook until the edges start to set, about 2-3 minutes.
  • Use a spatula to gently fold the omelette in half and cook for another minute until the inside is just set but still soft.
