Baked Salmon with Steamed Broccoli and Sweet Potato

Ingredients:

  • 2 fillets of salmon (150g each)
  • 200g of broccoli florets
  • 2 medium sweet potatoes (200g each)
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 lemon, sliced (for garnish)

Kitchen Tools Needed:

  • Oven
  • Steamer
  • Baking Tray
  • Mixing Bowl

Instructions:

  • Preheat the oven to 200°C (392°F).
  • Peel and chop the sweet potatoes into bite-sized cubes. Toss them in a mixing bowl with 1 tablespoon of olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Spread the sweet potato cubes on a baking tray and place them in the preheated oven. Bake for about 25 minutes until tender and golden brown.
  • While the sweet potatoes are baking, place the salmon fillets on another baking tray lined with parchment paper. Drizzle with 1 tablespoon of olive oil, season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Place lemon slices on top of the salmon.
  • After the sweet potatoes have baked for 20 minutes, add the salmon to the oven and bake for an additional 12-15 minutes until the salmon is cooked through.
  • In the last few minutes of cooking, steam the broccoli florets until bright green and tender, about 3-4 minutes.
  • Serve the baked salmon with the sweet potatoes and steamed broccoli on the side, garnished with fresh lemon slices.
