Instructions:
- Toast the bread slices in a toaster until golden brown.
- While the bread is toasting, bring a pot of water to a gentle simmer.
- Crack the eggs into separate small bowls.
- Using a slotted spoon, create a gentle whirlpool in the water and carefully slide the eggs into the water one at a time.
- Poach the eggs for about 3 minutes or until the whites are set but the yolks are still runny.
- Remove the eggs with a slotted spoon and place them on a paper towel to drain excess water.
- In a bowl, mash the ripe avocado with a fork and mix in lemon juice, salt, and pepper to taste.
- Spread the mashed avocado evenly over the toasted bread slices and top each with a poached egg.
