Ingredients:

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon of lemon juice

Instructions:

  • Toast the bread slices in a toaster until golden brown.
  • While the bread is toasting, bring a pot of water to a gentle simmer.
  • Crack the eggs into separate small bowls.
  • Using a slotted spoon, create a gentle whirlpool in the water and carefully slide the eggs into the water one at a time.
  • Poach the eggs for about 3 minutes or until the whites are set but the yolks are still runny.
  • Remove the eggs with a slotted spoon and place them on a paper towel to drain excess water.
  • In a bowl, mash the ripe avocado with a fork and mix in lemon juice, salt, and pepper to taste.
  • Spread the mashed avocado evenly over the toasted bread slices and top each with a poached egg.
